Copy cat of Olive Garden's Zuppa Toscana Soup. (I substituted spinach for kale and regular milk for heavy cream. I also omitted the bacon)

Recipe Ingredients for Zuppa Toscana Soup

1 pound Italian Sausage
2 Potatoes
1 red onion
2 clove garlic
2 cups baby spinach
24 ounces chicken broth
1 quart water
1 cup milk

Recipe Directions for Zuppa Toscana Soup

  1. Cook sausage in 300degree oven. Bake approx. 30 min, drain and cut into slices.

  2. Place onions, potatoes, chicken broth water, and garlic in pot. Cook on medium heat until potatoes are done. Add sausage and salt and pepper to taste. Simmer for an additional 10 min.

  3. Turn to low heat and add spinach and milk. Heat through and serve.
