This is a healthier version of Olive Garden's Zuppa Toscana soup. SO yummy!!!

Recipe Ingredients for Zuppa Toscana Soup-Potato Soup w/ sausage

1.23 pounds turkey italian sausage
32 ounces chicken broth
1 quart water
2 large russet potatoes
2 cloves garlic
1 medium onion
2 cups chopped kale
1 cup half and half

Recipe Directions for Zuppa Toscana Soup-Potato Soup w/ sausage

  1. Brown sausage

  2. Place water, broth, potatoes, garlic, and onion in pot and simmer until potatoes are tender.

  3. Add sausage and bacon

  4. Simmer 10 minutes

  5. Add kale and cream

  6. Heat through

  7. Garnish w/ some crushed red pepper flakes
