Creamy sausage and potato soup. This recipe is very similar to the one served in a well known restaurant with modifications to make it healthier.

Recipe Ingredients for Zuppa Toscana

16 oz package hot italian turkey sausage, ground
4 potatoes, cut into 1/4-inch slices
3/4 cup chopped onion
6 slices bacon
1 1/2 teaspoons minced garlic
2 cups kale - washed, dried, and shredded
4 cups water
2 cups chicken stock
2/3 cup fat free half and half

Recipe Directions for Zuppa Toscana

  1. In a large saucepan, add water, chicken stock and potatoes. Let simmer for 15 minutes.

  2. Meanwhile, cook sausage according to directions. When finished, set aside sausage. Remove extra grease from the pan and sausage using paper towels.

  3. In the same pan, cook bacon according to directions. Set aside cooked bacon and saute onions in the bacon grease. Add garlic and crumbled bacon back to the pan and cook an additional minute.

  4. Add onion/garlic/bacon mixture, sausage, kale, and half and half to the large saucepan. Simmer 4 minutes and serve.
