A hearty Italian-style seafood soup. Add a slice of crusty bread and you have a meal.

Recipe Ingredients for Zuppa di Pesce

2 tbsp olive oil
1 c fennel bulb, chopped
1/2 c onion, chopped
1/2 c celery, chopped
1 tbsp garlic, chopped
1/4 c carrot, chopped
1/2 c white wine, dry
1 c low sodium chicken broth
1 c water
1 c diced tomatoes, no sodium added
2 tbsp tomato paste
6 oz red snapper fillets
4 oz squid rings, cleaned
4 oz jumbo shrimp, peeled
4 oz scallops
8 oz baby clams, canned, drained
1/4 c parsley, chopped
1 ground black pepper

Recipe Directions for Zuppa di Pesce

  1. Heat oil in large pot on medium heat and saute chopped vegetables & garlic until just starting to brown.

  2. Add wine, then reduce heat slightly and add broth, water, tomatoes and paste. Season with black pepper.

  3. Let simmer for 5 to 8 minutes.

  4. Add snapper fillets, cooking 2 minutes until opaque.

  5. Add rest of seafood and parsley. Simmer until shrimp are pink, about 2 minutes. Serve immediately, garnish with fresh parsley sprig.
