Recipe Ingredients for Zuppa di Farro 2013

100 g celery
300 g courgettes
500 g potatoes
10 g flat leaf parsley
40 g olive oil
1200 g tinned tomatoes
235 g lentils
235 g borlotti beans
400 g spelt
2 g thyme
190 g peas
250 g mushrooms
200 g green beans
200 g carrots
300 g broccoli
250 g spinach
250 g kale
400 g onions
200 g asparagus
30 g garlic
2 chicken stock cubes
2 vegetable stock cubes
3 g ground pepper
50 g bacon
235 g chick peas

Recipe Directions for Zuppa di Farro 2013

  1. Boil all the greens until well done

  2. Liquidize them and the butter beans

  3. Chop all the other vegetables into 7mm cubes

  4. Fry in the olive oil for 10 minutes

  5. Add the liquid, the tomatoes and all the other ingredients bar the Spelt and simmer gently adding water as necessary for 60-80 minutes

  6. While this is going on soak the spelt in cold water

  7. Remove the bay leaves and parmesan rind

  8. Depending on whether you want to eat the soup right away or keep it, add the spelt and simmer for another 10-20 minutes if you are going to keep the soup or 30-40 minutes if it is to eat right away. Tastes vary on whether the spelt should be "al dente" or fully bloated. Keep tasting, but remember if the soup is to keep the spelt will cook for a good 20 minutes after you remove the heat.
