Zuni Chicken Recipe

You'll need to prep this the day before, and you won't taste the salt once cooked.

Recipe Ingredients for Zuni Chicken

3 lb chicken
1 tbs fresh thyme, stems discarded
1 tbs kosher salt
1/2 t freshly ground pepper
4 cloves garlic, peeled and minced

Recipe Directions for Zuni Chicken

  1. Leave chicken whole. Chop thyme leaves and garlic together. Slide fingers under the skin of the chicken over the breast and thighs. Use the garlic/thyme mixture and rub half over one side of the chicken (under the skin), then the other half. Be gentle or you'll tear the skin. Sprinkle salt all over the chicken, then season witih pepper. tie the legs together and use a toothpick to close the skin over the cavity. Place a paper towel on a plate, then put chicken on it and wrap tightly with plastic wrap. Allow to sit in the refrigerator at least overnight for prep the next day.

  2. When ready to cook, pre-heat the oven to 500 degrees. Pre-heat a cast iron skillet for minutes, then place the chicken in it, breast side up. Roast for 30 minutes. Turn the bird breast side down and roast for another 15 minutes, or until juices run clear when thigh is pierced. Transfer to a cutting board and cover with foil, allowing to rest for 10-15 minutes.

  3. Alternately, if you have a roaster over, roast the bird at 450 or 500 degrees for about an hour until the themometer shows 165 degrees. Allow to rest under foil for 10 minutes before cutting and serving.
