This healthy spaghetti substitute is very high in vitamins A and C. I made this up for my son

Recipe Ingredients for Zuke Pasgetti

1 medium zucchini
1/2 cup vegetable broth
2 cloves garlic
2 cups marinara sauce
2 oz part skim mozzarella
1/2 cup grated carrots
1/2 onion
1/2 red bell pepper
1/2 cup frozen spinach
2 tbsp grated Parmesan

Recipe Directions for Zuke Pasgetti

  1. Cut the zucchini into strips similar to spaghetti noodles. Chop the onion and the bell pepper. Grate the carrots. Drain the spinach. Mince the garlic.

  2. Start heating the sauce. Saute the vegetables (including garlic) in the vegetable broth until tender crisp.

  3. Serve the vegetables onto two plates and top with sauce and cheeses.
