Here is a tasty way to use up extra summer zucchinis

Recipe Ingredients for Zuke breakfast

1 large zucchini, diced
6 mushrooms, chopped
3 eggs
1 tsp olive oil
2 tbsp salsa

Recipe Directions for Zuke breakfast

  1. Heat frying pan with olive oil.

  2. Add zucchini and mushrooms, cook until they are how you like them

  3. remove from frying to two plates for serving, turn heat down under pan and scramble the eggs in the pan. You can add cheese or ham or anything you like to the eggs.

  4. Put half the scrambled eggs onto each plate of veggies and serve with salsa.
