The zuchinni is served on the side and i used the sauce to serve over Tillapia Fillets, Can also be served over whole wheat pasta.

Recipe Ingredients for Zuchinni in Tomato sauce

2 zuchinni
1 clove garlic
2 tbs shallots
1 tbs Olive Oil
1 tbs Dried Onion
1 tsp red pepper flakes
28 oz crushed tomatoes
1 tbs basil
1 tbs parsley
1 tsp marjoram
1 tbs Red Wine

Recipe Directions for Zuchinni in Tomato sauce

Saute shallot in olive oil till translucent add garlic and saute for another minute. Add zuchinni and cook for another 3 minutes or until zuchinni starts to become tender, add red wine Add crushed tomatoes, dried onion, pepper flakes, basil, marjoram, Let simmer for 10 minutes add parsley and serve.
