Zucchinni replaces the pasta for a very satisfying lasagna substitute. If serving as the main dish, it makes 6 servings with 296 calories per serving.

Recipe Ingredients for Zuchinni Lasagna

2 zuchinni
8 ounces mozzarella cheese
1/2 cup grated mozzarella cheese
1 onion
1 yellow or red pepper
2 cups marinara sauce
1 pound mushrooms
2 tablespoons olive oil

Recipe Directions for Zuchinni Lasagna

  1. Pour a thin layer of sauce in bottom of 9x13 pan.

  2. Saute thin slices of zuchinni in olive oil and put one layer on sauce in pan.

  3. Slice block of mozzarella into thin slices and layer on zuchinni.

  4. Saute peppers, onions, and mushrooms in olive oil. (You may have to supplement with a non stick spray)

  5. Mix rest of sauce with sauteed vegetables.

  6. Continue layering and finish with the shredded cheese. Bake for about 30 minutes or until bubbly.
