Recipe Ingredients for Zuchinni Bruchetta

1 t olive oil
4 oz zucchini
2 slices of italian bread
1 small tomato
2 T mozzarella
1 clove garlic
1 t balsamic vinegar
1/2 t italian seasoning

Recipe Directions for Zuchinni Bruchetta

  1. Heat oil in a skillet.

  2. Add zucchini and cook for about 4 minutes, turning once til golden brown.

  3. Sprinkle zucchini with italian seasoning.

  4. Toast the bread and layer sliced tomato, zucchini & cheese.

  5. Place under broiler until the cheese is slightly browned and the tomato is warmed.
