Make 2 loaves of zuchinni bread - 9 " loaves

Recipe Ingredients for Zuchinni Bread

2/3 c shortening
2 2/3 c sugar
4 eggs
2 c shredded Squash, Zuchinni
2/3 c water
3 2/3 c flour
2 tsp baking soda
1 1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon, ground
1 tsp cloves, ground
1 tsp nutmeg, ground

Recipe Directions for Zuchinni Bread

  1. Heat oven to 350 degree.

  2. Grease bottoms only of 2 loaf pans, 9x5x3, or 3 loaf pans, 8 1/2x 41/2 x 2 1/2 inches.

  3. Mix shortening and sugar in large bowl

  4. Add eggs, zuchinni and water.

  5. Blend in flour, baking soda, salt, baking powder, cinnamon, cloves and nutmeg.

  6. Stir in nuts and raisins if desired.

  7. Pour into pans.

  8. Bake until wooden tooth pick inserted in center comes out clean, about 1 hour and 10 minutes, cool slightly.

  9. Loosen sides of loaves from pans; remove from pans.

  10. Cool completely before slicing.

  11. To store wrap and refrigerate no longer than 10 days.
