A nice bread for breakfast with coffee.

Recipe Ingredients for Zuchinni Bread

3 cups Rye Flour
2 cups Shredded Zuchini
2 cups Sugar
3 Eggs
1 cup Oil
1/2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Vanilla
1 tsp Cinnamon

Recipe Directions for Zuchinni Bread

  1. Pre-heat oven at 350.

  2. Grease 2 bread pans.

  3. Put all dry ingredients in a bowl whisk to mix them together.

  4. Put Eggs, Oil, Vanilla, and Sugar in a bowl mix until well blended. Add Zuchinni to the Egg mix stir gently.

  5. Add flour, a little at time, mix beat on low until no flour is seen.

  6. Divide batter between two bread pans.

  7. Cook at 325-350 for 1 hour and 10 minutes
