Recipe Ingredients for zuchini/cheese coconut flour muffins

4 eggs
1/4 cup butter
1/3 cup Coconut Flour
1 1/2 cups zucchini
1/2 cup parmesan cheese
1/8 tsp salt
1/8 tsp baking powder

Recipe Directions for zuchini/cheese coconut flour muffins

  1. finely grate zucchini

  2. melt butter

  3. combine and mix together (by hand) zuchini and butter in a bowl

  4. In separate bowl, combine dry ingredients.

  5. Slowly add wet to dry ingredients

  6. divide batter into 12 muffins

  7. Bake at 200 celcius for 15 minutes, check them at 10 mins
