Zucchini is layered with cornmeal and garbanzo beans and topped with tomatoes and cheese.

Recipe Ingredients for Zuchhini layer bake

4 cups sliced zucchini
1 small onion
1/2 cup bell pepper
1 tsp garlic powder
1 egg
1/2 cup milk
1/2 cup whole wheat flour
3/4 cup cornmeal
1/2 cup grated parmesan
15 oz can diced tomatoes
15 oz garbanzo beans
5 oz grated colby cheese
1 cooking spray

Recipe Directions for Zuchhini layer bake

Combine all vegetables but tomatoes. Toss with garlic powder and parmesan and any spices you wish. In another bowl combine cornmeal and flour. Spray baking dish with cooking spray. Put in half of the vegetable mixture. Sprinkle half the flour mixture over the top. Repeat. Top with tomatoes. Cook at 350 uncovered for 30 minutes. Top with grated cheese and bake until cheese is melted
