Recipe Ingredients for Zuch/Corn/Tom Penne with Roasted Poblano Sauce

4 zucchini, sliced into half moons
4 tablespoons extra virgin olive oil (cut back if poss)
2 cups corn
2 roma tomatoes, seeded and diced
1/2 lb penne pasta
1/4 c white wine (opt)
1 tablespoon butter
2 tablespoon flour
1 roasted pepper
1 clove garlic (or 1 shallot)
12 oz. 1% milk
1 1/2 cup cooked chicken breast

Recipe Directions for Zuch/Corn/Tom Penne with Roasted Poblano Sauce

  1. cook pasta

  2. use 2 tablespoons olive oil to saute corn, when cooked put in a large bowl

  3. in the same pan add 2 more tablespoons olive oil and saute zucchini until cooked, add them to the bowl with the corn

  4. in the same pan, add a little onion or shallot (chopped) and saute, add diced tomatoes and cook until they are soft.

  5. add 1/4 cup white wine and cook until alcohol has evaporated.

  6. toss penne, veggies and tomatoes together

  7. with diced cooked chicken breast

  8. this alone would be hearty with some parm spinkled on top

  9. to make sauce:

  10. roast a poblano pepper on the stovetop or in the broiler. Peel and discard seeds and peel.

  11. add pepper, garlic and milk together and blend in a blender or with a hand blender.

  12. in a saucepan on med heat put 1 tab butter

  13. when melted add 2 tab flour and stir until flour/butter mixture is tan, not too brown.

  14. slowly add in milk/chili mixture about 1/8 - 1/4 cup at a time and stir to remove lumps.

  15. bring to a boil, stiring frequently, and then turn heat to low for about 10 min, or until sauce has thickened.

  16. Toss with pasta
