Recipe Ingredients for ZUCCINI, TOMATO BAKE

1 medium (2-1/2" dia) Onions
3 tbsp Butter
3 medium Squash, Summer, Zucchini, Includes Skin
369 grams Tomatoes, Red, Ripe
4 oz Reduced Fat Swiss Cheese
0.33 cup Cream, Sour, Reduced Fat, Cultured
1 tsp Paprika
0.5 tsp Sea Salt
0.5 tsp Garlic Powder
0.25 tsp Pepper, Black
4 tbsp Parmesan, Shredded Cheese

Recipe Directions for ZUCCINI, TOMATO BAKE

  1. In a large nonstick pan, saute onion in butter till tender. Transfer to a large bowl. Add the zucchini, tomatoes, 1/2 cup Swiss cheese, sour cream and seasonings; mix well.

  2. Transfer to an 11-in x 7-in x 2-in baking dish coated with cooking spray. Sprinkle with Parmesan cheese and remaining Swiss Cheese. Bake, uncovered,at 350 for 25-30 min or until vegetables are tender.
