A healthy, hearty cooked zuccini salad

Recipe Ingredients for Zuccini salad

7 zuccini
1 large onion
3 eggs
2 tsp kosher salt

Recipe Directions for Zuccini salad

  1. Spary a big pan with non-stick cooking oil, and heat on a medium heat.

  2. Shred zuccini in food processor.

  3. Mince onion and add to hot pan. Sauate until light golden.

  4. Add zuccini and cooked until most liquids are gone.

  5. Beat eggs with salt, black pepper, and garlic powder if like. Add to zuccini and keep cooking until firm.

  6. Serve hot or cold.
