1/3 cup splenda (not 1/3) but recipe only allowed me to add "splenda blend" and I am using regular splenda.

Recipe Ingredients for zuccini muffins

1 3/4 cup grated zuccini
2/3 cup whole wheat flour
1/6 cup splenda
1 tsp cinnamon
1 tsp lemon zest
1 egg white
1 tbsp olive oil
1 tsp baking powder
1/4 tsp baking powder

Recipe Directions for zuccini muffins

  1. preheat oven to 375

  2. grate zuccini

  3. add egg white and whisk

  4. add olive oil and sugar and mix

  5. add baking powder, baking soda, and flour and mix

  6. grease muffin pan with cooking spray

  7. makes 6 large muffins or tweleve small
