Recipe Ingredients for Zucchinni corn saute

1/2 cup onion, chopped
1 cup corn
2 zucchini, sliced
1 yellow squash, sliced
1 large tomato, chopped
3 cups eggplant, cubed
1 tsp olive oil
1 tsp butter
1 tbs fresh rosemary, finely chopped
1 tbs fresh basil, finely chopped
1 tbs fresh thyme, finely chopped

Recipe Directions for Zucchinni corn saute

  1. Heat oil and butter in pan

  2. Saute onion and corn until tender

  3. add zucchini and tomato, blend

  4. add herbs and salt to taste

  5. splash a little wine or vinegar and cover to steam veggies so they are crisp and not mushy
