1 1/2 cup All Purpose Flour
1 tsp Cinnamon, Ground
1/2 tsp Baking Soda
1/4 tsp Salt
1/4 tsp Baking Powder
1/4 tsp Nutmeg, Ground
4 oz SPLENDA No Calorie
4 oz Sugars, Granulated
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1/4 cup Oil, Vegetable Safflower, Salad Or Cooking, Linoleic, (Over 70%)
1 medium Egg, Whole
1/4 tsp Lemon Peel

Recipe Directions for Zucchinni Bread

In a mixing bowl combine flour, cinnamon, baking soda,salt, baking powder, and nutmeg. In another mixing bowl combine sugar, shredded zucchini, cooking oil, egg, and lemon peel:Mix well. Add flour mixture: stir just till combined. Pour batter into a greased 8x4x2-inch loaf pan. Bake in a 350` oven for 55 to 60 minutes or till a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack.
