Low cal muffin. Hint squeeze the water out of the zucchini using either a cheesecloth or a potato ricer works really well.

Recipe Ingredients for zucchini yogurt muffins

1 1/2 c all purpose flour
3/4 c whole wheat flour
3/4 cup oat flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 1/2 tsp cinnamon
1/4 tsp ground cloves
3 eggs
1/2 c vegetable oil
1/2 c applesauce
1 c plain or vanilla yogurt
1/2 c sugar
3/4 c honey
2 tsp vanilla extract
1 c shredded zucchini
1 c shredded carrots
1/2 c chopped pecans

Recipe Directions for zucchini yogurt muffins

  1. Pre heat oven to 400 degrees. Lightly spray muffin tins with Pam.

  2. In a bowl sift together dry ingredients. In a separate bowl beat together eggs, vegetable oil, applesauce, yogurt, sugar, honey, and vanilla. Mix flour into egg mixture. fold in zucchini, carrot, pecan. Scoop into muffin tins.

  3. Bake 18 to 20 minutes until toothpick comes out clean. Cool 10 minutes before transfering to wire racks to cool completely.
