Recipe Ingredients for zucchini, yellow pepper, grape tomato saute

1 tbsp olive oil
2 garlic cloves
2 zucchini
2 large yellow bell peppers
1 pint grape tomatoes

Recipe Directions for zucchini, yellow pepper, grape tomato saute

  1. Slice zucchini lengthwise into quarters and then slice to form cubes. Remove ribs and seeds from yellow bell peppers and slice into cubes. Heat olive oil in skillet. Peel and mash flat garlic cloves. Add to oil to heat garlic through and release oils. (Don't burn.)

  2. Add zucchini and bell peppers and heat on medium high heat. Continue to heat until vegetables begin to sweat (about 5 minutes). Add grape tomatoes and continue to cook until vegetables are crisp tender. Add salt, pepper to taste during cooking.
