Zucchini and whole wheat fettucine

Recipe Ingredients for Zucchini and Whole Wheat Fettuccine

12 oz dry whole wheat fettuccine
3 medium zucchini, cut into julienne strips
1/4 cup olive oil
1 tbsp butter
3 garlic cloves, minced
2 tbsp dried basil
1/2 cup grated parmesan cheese

Recipe Directions for Zucchini and Whole Wheat Fettuccine

  1. Prepare pasta; drain

  2. Steam zucchini in small amount of water over high heat for 3 minutes

  3. Drain and set aside

  4. Combine oil, butter, garlic, and basil in small saucepan

  5. Cover and simmer for 10 minutes

  6. Do not allow garlic to brown

  7. Toss fettuccine with zucchini, garlic-basil sauce, grated cheese
