Recipe Ingredients for zucchini wheat with walnuts and parmesan

10 oz wheat berries
4 zucchini
2 oz walnuts
2 tbsp parsley
1 tbsp mint
3 oz parmesan cheese
1/3 cup olive oil
1 tbsp lemon juice

Recipe Directions for zucchini wheat with walnuts and parmesan

  1. Soak wheat in cold water for 12 hors. Drain and trasnfer to saucepan. Pour in enough hot water to cover with double the volume.

  2. Bring to a boil and cook until tender - 1-2 hours.

  3. Rinse zucchini, pat dry and slice thinly. Broil.

  4. Trasnfer to a bowl. Season with SP and drizzle with 2T EVOO. Sprinkle parsley and mint over top.

  5. Drain wheat and set aside. Let cool.

  6. Place zucchini on a large serving dish and spoon wheat over top. Drizzle with EVOO and lemon juice.

  7. Add toasted walnuts, parmesan.
