makes 2 loaves of lovely moist zucchini bread, my kids cant get enough! and it keeps really well if covered in the fridge, also freezes really well

Recipe Ingredients for zucchini and walnut loaf

3 cups all purpose flour
1 tsp salt
1 tsp baking powder
3 tsp ground cinnamon
3 eggs
1 cup applesauce
2 cups white sugar
3 tsp vanilla
2 cups grated zucchini
1 cup chopped walnuts

Recipe Directions for zucchini and walnut loaf

  1. grease and flour two 8x4 inch pans. Preheat oven to 325deg F (165deg C).

  2. Sift flour, baking powder, salt, soda, and cinnamon together in a bowl.

  3. Beat eggs, applesauce, vanilla and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts till well combined. Pour batter into prepared pans.

  4. Bake for 40-60 mins, or until tester inserted in the centre comes out clean. Cool in pan for 20 mins, then remove from pan and allow to completely cool.
