Recipe Ingredients for Zucchini Walnut Bread

1/2 cup chopped walnuts
2 eggs
1 cup sugar
1/4 cup vegetable oil
1 3/4 cup all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon baking powder
1 cup grated zucchini
1/2 cup raisins
1/2 teaspoon vanilla extract

Recipe Directions for Zucchini Walnut Bread

  1. Whisk together flour, baking soda, salt, cinnamon, and baking powder.

  2. In a large bowl, beat the eggs. Gradually beat in sugar, then oil. Add flour mixture alternately with zucchini into the egg mixture. Stir in the raisins, walnuts, and vanilla. Pour batter into a 9 x 5 greased and lightly floured loaf pan.

  3. Bake on lowest rack of the oven at 350 degrees F for 55 minutes. Let cool for 10 minutes in the pan, then turn out onto rack to cool completely. To freeze, wrap loaf in plastic wrap and then wrap in heavy freezer paper. Will keep indefinitely.

  4. This recipe can easily be doubled.
