Vegetable Soup great alone, or as a base to add chicken or other lean meats to. I sometimes cut up avocado and add it directly to my bowl of soup.

Recipe Ingredients for Zucchini Vegetable Soup

2 1tsp Olive Oil
3 medium Squash, Summer, Zucchini, Includes Skin
1 cup, chopped Onions
1 cup, chopped Carrots
1 cup, diced Celery
1 cup Tomatoes, Red, Ripe
1 potato medium (2-1/4" to 3-1/4" dia.) Potato, Baked, Flesh And Skin
1/4 tsp Cumin
3 clove Garlic
4 cup (8 fl oz) Water
1/4 tsp Sea Salt

Recipe Directions for Zucchini Vegetable Soup

Saute garlic and onion. Add in celery and cook another few minutes. Add remaining ingredients and let simmer for about 40 minutes.
