Recipe Ingredients for Zucchini Vegetable Medley

1 tablespoon olive oil
1/2 cup diced onion
1 clove garlic
1 tablespoon ketchup
1 teaspoon chicken bouillon
1/2 cup water
1 medium zucchini
1/2 cup diced cucumber
1 leaf fresh basil
1 teaspoon chopped fresh parsley
1 medium tomato

Recipe Directions for Zucchini Vegetable Medley

  1. In medium frying pan over high heat, heat olive oil and garlic until the garlic begins to bubble. Add onion and fry until onion is translucent. about 4-5 minutes. Add ketchup and mix well until onion and garlic are coated and begin to stick to pan.

  2. Mix bouillon in water and add to pan, scraping pan to loosen any stuck-on bits. Add zucchini and cucumber, cover, reduce heat and simmer for 5 minutes. Add basil and parsley and simmer for 5 minutes more. Add chopped tomato, salt and pepper to taste. Cover, turn off heat and let stand a few minutes before serving.
