Recipe Ingredients for Zucchini (Vegetable) Cake

3/4 cup egg white
1/8 cup oil
2 cups grated zucchini
1/4 tsp. salt
1 cup sugar
2 cups whole wheat flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ground cloves
1 carrot, grated
2 oz. yam, grated
1 1/2 oz. jicama, grated

Recipe Directions for Zucchini (Vegetable) Cake

  1. Mix together egg, oil, and vegetables.

  2. Mix in dry ingredients.

  3. Pour into a 9"x13" cake pan, two small loaf pans, or a cupcake pan.

  4. Bake at 350 F for 45-60 minutes, or until toothpick inserted in center comes out clean.
