A greener tuna melt, makes a really good quick dinner.

Recipe Ingredients for Zucchini Tuna Melt

1 medium zucchini
2 1/2 slices colby cheese
1 pinch salt
1 pinch pepper
4 1/2 oz tuna, packed in brine, drained
1 tsp dijon mustard

Recipe Directions for Zucchini Tuna Melt

  1. Slice zucchini into four long thin slices.

  2. Put under a very hot grill or broiler and grill until it starts to blacken.

  3. Remove (but don't turn off grill), flip over, and spread with mustard. Top with tuna, patting it down fairly firmly. Top with cheese, dash of salt, and dash of pepper.

  4. Return to grill and turn down heat to medium low. Grill until cheese is melted and beginning to brown.
