Recipe Ingredients for zucchini in tomato sauce

4 medium Squash, Summer, Zucchini, Includes Skin
1 large Onions
1 cup Recipe Ready Chopped Tomatoes
6 tbsp Extra Virgin Olive Oil
1 tsp Sea Salt

Recipe Directions for zucchini in tomato sauce

  1. Saute the onion with 2 tbls. of olive oil.

  2. Add all ingredients, expect the remaining olive oil

  3. Add water to cover all ingredients.

  4. Boil till zucchinis are softer and the sauce is water-free.

  5. Add the remaining olive oil, and remove from stove.

  6. Let rest for an hour.

  7. Serve with yoghurt or goat cheese.
