Yum! A light meal, good for hot summer evenings. Should be served with something on the side, as it isn't really enough to fill you up.

Recipe Ingredients for Zucchini and tomato salad

1 zucchini, sliced
1/2 tomato, seeded and sliced into strips
1 can beans, black
2 tbsp salsa
1/8 cup shredded cheese
1 tbsp extra virgin olive oil

Recipe Directions for Zucchini and tomato salad

  1. Heat the olive oil until warm over medium heat. Toss in zucchini and tomato, add spices, and heat, stirring occasionally. While that is cooking, heat the can of beans in a separate pot. When all is cooked through (not mushy), serve vegetables and beans side-by-side, topped with cheese sprinkled lightly, and a spoonful of salsa on the side.

  2. Spices can be parsley, oregano, cinnamon, salt, pepper, whatever you like with these ingredients.
