4 zucchinis
2 cups of tomatoes
2 1/2 cups of cooked quinoa
3 tbl balsamic vinegar
1 tbl olive oil
1 tsp dijon mustard
1/2 tsp splenda

  1. cubed zucchinis roasted in over 375, 30 mins.

  2. cook quinoa with water.

  3. chop tomoates, mix everything.

  4. dressing: mix all remaining ingredients.
