Recipe Ingredients for Zucchini Tomato Frittata

1 tablespoon olive oil
1 small onion, sliced
2 medium squash, sliced (zucchini)
4 whole eggs
4 egg whites
3/4 cup low fat cheese, shredded
2 tomatoes, sliced thin
1 salt
1 pepper

Recipe Directions for Zucchini Tomato Frittata

  1. Preheat oven to 425 degrees. In a 10 inch oven proof skillet heat oil, add onion, zucchini and cook, covered, stirring often until tender but not browned.

  2. Uncover, cook until liquid evaporates.

  3. In a medium bowl whisk eggs, cheese, salt & pepper. Pour egg mixture over zucchini, gently lifting zucchini to allow eggs to coat bottom of pan. Arrange tomato slices in an overlapping pattern on top.

  4. Return skillet to medium heat and cook until sides are set and still runny on top, 5-8 minutes. Place pan in oven and cook through when tested, and tomatoes are slightly browned, 4-6 minutes. Remove from oven, slide a heatproof spatula around edge and loosen from skillet onto a plate. Can be served at room temperature.
