Recipe Ingredients for Zucchini Tomato Casserole Side

4 medium zucchini, diced
2 medium tomatoes, diced
1 1/2 cups shredded Cheddar cheese
2 tablespoons dried minced onion
1 tablespoon dried parsley flakes
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup parmesan cheese
2/3 cup bread crumbs
2 eggs, beaten
2 tablespoons butter, melted
1 tsp garlic, minced

Recipe Directions for Zucchini Tomato Casserole Side

mix all ingredients except the last 5 in a large bowl. Mix the parmesan and bread crumbs together separately, and then reserve about 1/3 of the mixture when mixing it in with the rest. Mix the butter, eggs and garlic together before adding to the main bowl. Spray a casserole dish with Pam. Add mixture to casserole dish, and sprinkle the rest of the crumb mixture on top. Bake at 250F for 25-30 minutes or until the top looks crusty.
