The original recipe calls for the zucchini to be cooked for 20 to 30 minutes, but zucchinis can widely vary toughness. Watch it closely and when it is close to being done, take it off the heat.

Recipe Ingredients for Zucchini with Thyme

2 1tsp Olive Oil
1 tbsp Butter
0.5 cup, chopped Onions
1 medium Squash, Summer, Zucchini, Includes Skin

Recipe Directions for Zucchini with Thyme

  1. In a large skillet, heat the olive oil and butter on med heat. Add onion and parsley and cook until soft but not browned.

  2. Add zucchini sticks, crumbled bouillon cube, thyme and a pinch of salt and pepper. Gently stir to coat the zucchini. Cover and cook until tender, from 10-20min, depending on how tender the raw zucchini is to begin with and how small you have sliced the pieces. Check and stir every few min. Be careful not to overcook.
