Recipe Ingredients for Zucchini and Sun Dried Tomatoes

32 oz Squash, Summer, Zucchini, Includes Skin
1 onion Spanish Onion
6 oz Sun Dried Tomatoes
2 oz Extra Virgin Olive Oil

Recipe Directions for Zucchini and Sun Dried Tomatoes

Cut zucchini into thick strips or rounds. Slice onion. Slice tomatoes and cover in warm water for up to 15 minutes. Brown onion in oil until translucent while tomatoes soak. Add zucchini once onion has cooked. When 15 minutes have passed, add tomatoes and water. Cook until zucchini is soft/tender. Serve hot or cold.
