Poblano stuffed with zucchini mixture

Recipe Ingredients for Zucchini stuffed Poblano

0.5 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.33 medium raw Bell Pepper Red
0.33 medium Yellow Hothouse Bell Pepper
0.33 onion Yellow Onion
1 serving Salsa
1 tsp Slap Ya Mama Cajun Seasoning
1 serving poblano raw
5 ea. Raw Tomato Cherry

Recipe Directions for Zucchini stuffed Poblano

Coarsely chop 1/2 zucchini, 1/3 red & yellow peppers, 1/3 onion, and a handful of halved grape tomatoes. Pack into 2 halves of a poblano pepper. Wrap in foil and bake about 30 minutes. Top with a spoonful of salsa. Add mozzarella if desired and stick back in oven a few minutes to melt. Serves 2.
