2 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 cup, chopped Onions
1 cup Asparagus
1 cup, diced Mushrooms, Portabella
1 cup, chopped Peppers, Sweet, Green
1 cup, chopped or sliced Tomatoes, Red, Ripe
1 cup Spinach
1 serving Extra Virgin Olive Oil

Recipe Directions for Zucchini Stir-fry II

  1. chop all ingred., while olive oil heats up

  2. add onions, peppers, zucchini, asparagus, and garlic

  3. sautee until tender

  4. add mushrooms, sautee for about 3 mins

  5. add spinach and tomatoes, sautee for about another 5 mins
