Recipe Ingredients for Zucchini Stew

6 cup sliced zucchini
2 cup sliced onions
1 tbsp olive oil
4 cup sliced mushrooms
1 cup rotel tomatoes
3 cup stewed tomatoes
3 clove crushed or chopped garlic
4 tbsp basil or italian seasoning
1 pepper to taste

Recipe Directions for Zucchini Stew

Saute onion in olive oil, add tomatoes, zucchini, mushrooms, seasoning, simmer until zucchini is desired tenderness. Freezes well.
