Recipe Ingredients for Zucchini & Squash Casserole

3 cups cooked brown rice
2 cups low sodium chicken broth
300 g sliced zucchini
300 g sliced summer squash
50 g sliced onion
320 g sliced tomato
4 cloves garlic minced
1/2 cup chopped fresh basil
1/2 cup grated parmesan cheese
1 cup grated mozzarella cheese

Recipe Directions for Zucchini & Squash Casserole

Prepare Brown Rice in Chicken Broth (enough to make 3 cups cooked). Spread the rice in the bottom of a 13x9 casserole dish. Layer 1/2 of the zuchinni, squash, tomatoes, onion, garlic, and basil on top of the rice. Spread 1 cup of Light Ragu No Sugar Added Tomato & Basil Sauce on top of the vegetables. Sprinkle with 1/4 cup parmesan and 1/2 cup mozzarella cheeses. Repeat the vegetable, sauce and cheese layers. Cover with foil and bake at 375 for 45 minutes.
