Recipe Ingredients for Zucchini Soup

3 zucchini
1/2 vegetable bouillon cube
6 cups water
1 small onion
4 garlic cloves
1 teaspoon sea salt

Recipe Directions for Zucchini Soup

  1. heat oil in a soup pot

  2. add diced onion and garlic and saute till translucent

  3. add zucchini slices, salt/pepper, and bouillon cube

  4. add water to just cover the zucchini and allow water to come to boil, then lower heat and cover and cook until the zucchini is completely cooked (test with a fork)

  5. then either use an immersion blender to puree or pour soup into a blender and puree.

  6. taste and add any additional salt/pepper as desired
