Zucchini Soup Extremely high in salt, but other than that its great tasting and packed with great nutrients. Makes 1 Quart

Recipe Ingredients for Zucchini Soup

4 Zucchini, medium, sliced
1 Onion, diced
4 cloves Garlic, minced
2 teaspoon Olive Oil
4 cups Chicken Broth
1/2 tsp salt (Tony Cachere Creole Seasoning)

Recipe Directions for Zucchini Soup

  1. Saute zucchini, onion and garlic in 2 teaspoons olive oil 15 minutes

  2. Add ingredients listed above to 4 cups Chicken Broth and simmer for 20 minutes

  3. Transfer to a blender and blend at low speed for 1 minute or more.

  4. Add Tony Cachere Creole Seasoning to taste.
