A nice light soup to start a meal.

Recipe Ingredients for Zucchini Soup

600 g zucchini, sliced
4 cups chicken stock
1 clove garlic, crushed
1 cup onion, diced

Recipe Directions for Zucchini Soup

  1. Saute onion in pot in medium heat for 2 min (until soft).

  2. Add zucchini, ham and chicken stock.

  3. Simmer for about 30 min.

  4. Remove from stovetop and blend in blender.

  5. Add salt & pepper to taste.

  6. Serve hot or cold.
