Recipe Ingredients for Zucchini Soup

4 medium zucchini, sliced
1 onion, diced
2 cloves garlic
2 tablespoons olive oil
3 cups low-sodium chicken broth
4 teaspoons basil
4 teaspoons oregano
1/2 cup fat-free sour cream

Recipe Directions for Zucchini Soup

  1. In a small bowl, mix together the sour cream, one teaspoon of basil, and one teaspoon of oregano. Refrigerate until serving.

  2. Add the olive oil to a pan over medium-high heat. Add the onion and garlic and cook until tender. Add the zucchini and cook until zucchini is tender, about 5 min.

  3. Add the broth and the rest of the basil and oregano, bring to a boil, turn heat to low, cover and simmer for 15 min.

  4. Blend in batches in a food processor or blender. Return to pan to reheat, and serve with one tablespoon of the sour cream mixture.
