Zucchini, corn, roasted red pepper, tomatillos, and green chilies in a hearty, smooth soup.

Recipe Ingredients for Zucchini soup

1 Zucchini, medium
1 medium onion
1 cup corn, sweet, yellow
1/2 cup red pepper
1 tbsp olive oil
2 tomatillo
3 cups vegetable broth
3 tbsp green chilies

Recipe Directions for Zucchini soup

  1. cook chopped onion, red pepper, and zucchini in olive oil

  2. Blend tomatillos, green chilies, and 2 cups vegetable broth in blender until smooth.

  3. Add to zucchini mixture

  4. Add corn

  5. Cook ten minutes or so until zucchini and corn is tender.

  6. Salt and pepper to taste.
