Zucchini is a favourite vegetable in Bulgarian cuisine. This recipe combines zucchini, feta cheese (another traditional Bulgarian food) and semolina to make a quick delicious meal. It was taken from bgkulinar.net (http://bgkulinar.net/recepti.php?id=800).

Recipe Ingredients for Zucchini with semolina

500 g zucchini
160 g feta cheese
40 g semolina
2 eggs
1 tsp sunflower oil
3 tbsp dill
3 tbsp parsley
1 1/2 tsp salt
1 tsp pepper

Recipe Directions for Zucchini with semolina

  1. Peel and grate the zucchini. Let them drain in a strainer.

  2. Beat the eggs and add the grated cheese, the semolina, the parsley and dill, pepper and salt.

  3. Grease the bottom of a pan with the oil and spread the grated zucchini on it.

  4. Pour the semolina mix over them and bake for 20 minutes at 300F.

  5. Serve with garlic yogurt.
