Recipe Ingredients for Zucchini Savory Muffins

2 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.5 cup Reduced Fat Mild Cheddar Shredded Cheese
2 large Egg, Whole
20 crackers Crackers Whole Wheat
1 small Onions

Recipe Directions for Zucchini Savory Muffins

  1. Preheat oven to 400, spray muffin pan.

  2. Grate Zucchini, wring out all water with paper towel.

  3. Place in medium bowl, add cheese, onion, eggs, crackers and mix together.

  4. Place mixture into muffin pan, using a spoon to press mixture down firmly.

  5. Cook for about 15-20 minutes until tops are golden brown.
