Stove-top casserole with less meat and more veggies.

Recipe Ingredients for Zucchini Sausage Casserole

15 1/2 ounces stewed tomatoes
2 slices onions, chopped
2 small zucchini, sliced
3 large mushrooms, sliced
6 ounces sausage, raw, broken up
1 cup elbow macaroni, uncooked
1 tablespoon oregano
1/4 teaspoon minced garlic
1 Salt and pepper to taste

Recipe Directions for Zucchini Sausage Casserole

  1. Chop onions and mushrooms.

  2. Put onions, mushrooms and sausage into skillet and brown. When onions are clear, add stewed tomatoes with juice (chop larger pieces of tomatoes), garlic, oregano, salt and pepper. Simmer while you cook the elbow macaroni until al dente.

  3. After simmering sauce for about 10 minutes, add zucchini and simmer just until zucchini is getting translucent.

  4. Drain macaroni and add to sauce.

  5. I used 1 Cup as serving size.
